摘要:
发酵容器对固态发酵白酒的香型、风味、质量等都具有重要作用。当前,根据白酒酿造工艺的不同设计应用了新型发酵窖池,如芝麻香型白酒酿造使用的砖窖或水泥窖等。文章从设计目的、结构分析、生产应用等方面,分析设计了一种馥香白酒固态发酵窖池,其特点在于窖池上部三分之二的池壁由粘土层和青石板层构成,窖池下部三分之一的池壁由粘土层和池壁窖泥层构成,窖池底部由池底窖泥层、池底防水层和粘土层等构成,并由窖泥构筑“十”字泥梗。该窖池发酵的酒醅,经分层出醅、分层蒸馏等工序,产酒分类存放、长期储存,底部酒醅产酒偏浓香型白酒风格,上部酒醅产酒偏芝麻香型白酒风格,所生产的原酒具有“复合幽雅、诸味协调、风格独特”等特点。
Abstract:
Fermentation container play an important role in flavor type, flavor and quality of solid-state fermentation liquor. At present, according to the different design of liquor brewing technology, new fermentation pits, such as brick pits or cement pits used in sesame liquor brewing, have been applied. This paper analyzes and designs a kind of solid-state fermentation pit of compound flavor liquor from the aspects of design aim, structure analysis, production and application. The characteristics of the pit are that the upper two-thirds of the pit wall is composed of clay layer and bluestone plate layer, the lower third of the pit wall is composed of clay layer and pit wall mud layer, the bottom of the cellar is composed of the mud layer at the bottom of the pool, the waterproof layer at the bottom of the pool and the clay layer, and the "ten" mud terrier is constructed by the mud in the cellar. The fermented grains fermented in this pit are classified and stored for a long time. The bottom fermented grains produce strong flavor liquor style, and the upper fermented grains produce sesame flavor liquor style. The original liquor produced by this pit has the characteristics of "compound elegance, harmony of various tastes, unique style" and so on.
